Indian dishes, switz table, english speaking post for change
Veg thali in Switzerland : 2 curries, one pure veg, one veg, one bhoja, one dalma, served with coriander leaves, green lemons, raita and raw pink onions. The first time I cook Indian food and everything is eaten. Better quantities, better hosts !
Pure veg curry
To begin : Mix ginger very thinly and add water. Boil pumpkin cut in large pieces and mix it. Mix cashew nuts separately to a smooth paste.
Gravy : in a hot pan, fry cinamon, bayleaf, red chile. Add the ginger and let it cook till the fat re-appear. Add the 3 powders : turmeric, cumin and chile (not that much of this third because of the chile at the beginning), and quick a bit of water, let infuse a bit. Add pumpkin and then cashew nuts. Taste and correct with salt, water and / or oil.
Curry : add the vegetables and finish the cooking in the sauce. At the very end, you can add coriander leaves and cinnamon powder (if everybody like it only !)
To begin : mix garlic and ginger, cut thinly onions
Gravy : in a hot pan, make a caramel in oil with cumin seeds (or panch phoron), cook the onions in it as soon as it colors. Add the garlic and ginger paste. Let it cook till the fat re-appears. Add the tree powders : turmeric, red chile and cumin. Add a bit of water, mix and let infuse a bit. Taste and correct with salt, water and / or oil.
Cook the chick peas in water. Mix them with the veg curry. I think I could have added some tomatoes at the end, and cooked them in the curry.
Alu Gobi Massala
Peel the cauliflower and potatoes and cut them in pieces of nearly the same size. Wash the cauli flower in water with a bit of turmeric, and remove the water. Heat the pan, add the caulifower, fry them a bit and add turmeric powder. When the cauliflower are half cooked, add the potatoes and let cook.
By the end, I think I maybe should have used the veg curry for the alu gobi as well ; and that the pure veg curry is better for pumpkin or egg plants curries.
Bhoja = fried vegetables
I chose : green banana, carotts, potaoes and few onions, cut in thin slices
In a hot pan, fry seeds (coriander, cumin, sesame, mustard... what is available in the kitchen). And add the vegetables, except bananas, only when all the other are nearly cooked, and onion at the very end.
In a pot, cook red lentils with turmeric, pumpkin, radish and potatoes, and salt, cover with water.
And to enjoy it at the best, sprinkle all the dishes with coriander leaves, add lemon juice, onion slices. raita as wished. Eat the dalma on the rice.
